Balzac’s Coffee Roasters Redefining Canadian Coffee

Balzac’s Coffee Roasters was established in 1996 in Stratford, Ontario, with the goal of introducing the atmosphere of a large café in Paris to Canada. With 16 sites throughout Ontario and a significant online and retail presence, what began as a single café has expanded into a specialty coffee roaster and café network.

Fundamentally, Balzac’s prioritizes craftsmanship and quality. 100% Arabica beans are roasted in small batches at their roastery in Ancaster, Ontario, with the goal of delivering a robust flavor without sacrificing any quality. Each café has a unique personality because of its thoughtful design, which reflects the historical and cultural background of the area.


Innovations & A Robust Canadian Identity 

Balzac’s introduced its newest flagship blend and product additions in 2025, further solidifying its Canadian heritage: 

  • Canada’s Cup Blend is a medium roast that tastes like caramel, almond, and milk chocolate. 
  • It is “bold, yet balanced – like the Canadian spirit.” 
  • Launched in June 2025, the Canada’s Cup Iced Maple Latte is a limited-edition iced beverage that combines Fair Trade organic espresso, Ontario maple syrup, sea salt from Vancouver Island, and a distinctive souvenir recycled aluminum cup manufactured in Ontario. 
  • Retail Expansion – In June 2025, the Canada’s Cup whole bean version was introduced to major shops, including numerous Costco stores, across the country. 
  • Impact & Recognition –  In 2023, the Coffee Association Canada presented Balzac’s with the “Small Chain, Big Impact” award in recognition of its dedication to sustainability and diversity as well as its involvement in the community.
